Funny tomato related anecdote…I was over 60 years old before I had a tomato sandwich. I’d heard of them, but didn’t “get” them. Having been a whole food purist…white bread?? Gasp!! But having moved from California to Virginia and hearing more about this delicacy, and with an abundance of home grown tomatoes I had to try!
So a few years ago I baked myself a nice loaf of potato bread (telling myself it was “healthier”) and procuring a small jar of Duke’s mayo (because that seems to be a thing here) I proceeded to give the ol’ tomato sammich a try. And let me tell you, I was dumbfounded how something so simple could be so incredibly delicious. (This year I made Challah for the bread and that made me love it even more!)
I can’t wait to try this! On the subject of dry farmed early girl tomatoes, I bought some at the end of last season and froze them. After being frozen, how do I use them, soups, sauces, anything else?
Funny you should ask! We are talking about freezing whole tomatoes in this Friday's post! Yes, I just add them straight into pans of braised meat, pots of soup or tomato sauce, or anywhere else I'd use canned tomatoes. No need to defrost!
I made this and it was delicious, despite the fact that I completely forgot about the bread! I’m making it again this weekend with bread this time, lol.
My favorite salad when summer and the garden is in full swing is a niçoise - tomatoes and green beans and tarragon or basil (for a dressing) straight out of the garden plus all the other yummy deliciousness just cannot be beat!
Iceberg lettuce is so maligned - but I love it. The crunch is so satisfying. I'll be making this tomorrow after I pick up my CSA tomatoes.
